Janine Brussels — Bakery & Brewery | Circular Food, Zero Waste Bread & Beer
This short documentary takes you inside Janine, a unique bakery and brewery in Brussels built around a circular food system.
Starting in the middle of the night, when the bakery is still empty, the film follows the bread-making process from the first preparations to the moment the doors open to the public. Bakers work through the night mixing, shaping and baking bread while the city sleeps.
Janine’s concept is simple and sustainable: nothing goes to waste. Unsold bread from the bakery is used to brew beer, and the brewing grains return to the bakery to make new bread. A circular economy approach to food, where bakery and brewery support each other.
Through close observations of gestures, textures and sounds, this film captures the craft of artisan bread making, the rhythm of night work, and the atmosphere of a place rooted in local production, sustainability and zero waste philosophy.
